Recipe!

Hey guys - I haven't been super active on this blog so let me give it a whirl.  I tried this Chile Recipe over the weekend (sans corn) and it was quite good, so wanted to pass it along as a recommendation - it's from allrecipes.com

Also, I don't know about you all but honestly I have accidentally missed logging my points several times.  Today in fact.  oh, and yesterday too. It hasn't diminished my focus on the challenge but for some reason, I just keep "remembering" to log in right after 3pm.  So, sorry in advance for dragging down the team score...but hey, it's not about the points...

SUPER Motivating Quote of the Day!

I got these post-its the other day and it has two old fashioned ladies on them (think Dorothy's family and the wicked witch from Wizard of Oz) and they have slight smirks on their faces.  The quote reads:

HAHAHAHAHA! I don't know about you but that is so me and would explain why I LOOOOVE to laugh as much as possible :)

Hope you guys are keeping those hips nice and slim simply by laughter alone :)

Spicy Red Fish Recipe

Spicy Red Fish Recipe

I found this recipe on Epicurious over the weekend and it was really good.  Enjoy:


3 large red bell peppers
5 tablespoons extra-virgin olive oil
12 shallots, chopped
2 14 1/2-ounce cans chopped tomatoes in juice
2 garlic cloves, minced
3/4 teaspoon dried crushed red pepper
1/2 cup chopped fresh cilantro
1 teaspoon grated lemon peel
2 pounds halibut or cod fillets, cut into 1-inch pieces

Char bell peppers over flame or in broiler until blackened on all sides. Enclose peppers in paper bag 10 minutes. Peel, seed, and chop peppers.

 Heat oil in heavy large skillet over medium heat. Add shallots and sauté until very soft, about 6 minutes. Stir in peppers, tomatoes with juice, garlic, and crushed red pepper. Simmer 10 minutes to blend flavors. Stir in cilantro and lemon peel. Add fish; simmer until just opaque in center, about 5 minutes. Season stew to taste with salt and pepper. Spoon into bowls and serve.
